This is a very simple easy to make recipe. The inspiration to create this recipe, came from my new craving for something sweet, gooey, and chewy after my intense Bikram yoga workout!
Chia seeds have become one of the most popular “super foods” full of good-for-you vitamins, minerals, and micro-nutrients plus good source of protein.
This pudding turned out quite yummy and completely satisfied my sweet craving!! Soaked chia seeds absorb lot of moisture and plump up into a texture almost like tapioca. For the sweetener, I have used coconut palm sugar which compliments the pudding well with its subtle sweet caramel flavor. The taste of this pudding is very similar to an Indian dessert called ‘Kheer’ or ‘Payasa’. Best eaten chilled.
For the milk I used home-made milk (made with soaked walnuts and pumpkins seeds) you can use any combination of nut/seed milk you like. Store bought coconut milk also goes very well with this recipe.
- 1 cup Nut Milk
- 3-4 tbsp soaked Chia Seeds (soaked for 2- 3 hours)
- 1 tbsp shredded Coconut (optional)
- 1 mashed Banana
- 2-3 tbsp Coconut Sugar
- 1 pinch Nutmeg
- 1 pinch Saffron
- 1 pinch Cinnamon
- Fruits for garnish
Take the soaked chia seeds in a bowl. Add all the ingredients listed above and incorporate well to form a pudding consistency by slowly adding nut milk into the bowl. Tastes best chilled. Garnish with fruits. Yummy!!
Per ayurveda, chia seeds are tridoshic – balance all our three doshas – vata, pitta, and kapha. They are also considered “sattvic” as they promote calmness and equanimity.
Another added benefit of this pudding is both chia and pumpkin seeds are ranked high in the ‘Foods to Help You Snooze by DR OZ’.
Both are rich in the amino acid tryptophan. Tryptophan is the amino acid the body uses to make the feel-good and relaxation neurotransmitter serotonin.
So, this pudding not only satisfied my sweet gooey craving but as an added bonus slumbered me into the dreamland!!
